Hearty Vegetable Soup
Ingredients:
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 bell pepper, diced (any color)
- 2 medium potatoes, diced
- 1 zucchini, diced
- 1 cup green beans, chopped (fresh or frozen)
- 1 can (14.5 oz) diced tomatoes (with juice)
- 4 cups vegetable broth (or more as needed)
- 1 tsp dried thyme
- 1 tsp dried basil
- 1 bay leaf
- Salt and pepper to taste
- 1 cup spinach or kale (optional)
- Fresh parsley for garnish (optional)
Instructions:
- Sauté the Aromatics:
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Add the minced garlic and cook for another minute.
