Polish sausage (also known as kielbasa), sauerkraut, and potatoes are a classic, hearty combination often enjoyed in Polish cuisine. Here’s a simple and delicious way to prepare this dish:
Ingredients:
- 4 Polish sausages (kielbasa)
- 4 medium potatoes (Yukon Gold or Russet work well)
- 1 medium onion, chopped
- 2 cups sauerkraut (drained and rinsed if you prefer a milder flavor)
- 2 tablespoons olive oil or butter
- 2 cloves garlic, minced (optional)
- 1 cup chicken broth (or water)
- Salt and pepper to taste
- 1 teaspoon caraway seeds (optional)
- Fresh parsley for garnish (optional)
Instructions:
- Prepare the potatoes:
- Peel and cut the potatoes into cubes. Place them in a pot of salted water and bring to a boil. Cook for 10-15 minutes, or until the potatoes are fork-tender. Drain and set aside.
- Cook the sausages:
- In a large skillet, heat 1 tablespoon of olive oil or butter over medium heat.
- Add the sausages and cook for about 5-7 minutes, turning them occasionally until they’re browned on all sides. Remove the sausages from the pan and set aside.
- Sauté the onions and garlic:
- In the same skillet, add another tablespoon of olive oil or butter.
- Add the chopped onion and garlic (if using) and sauté for 3-4 minutes, until the onion becomes soft and translucent.
- Combine sauerkraut and potatoes:
- Add the drained sauerkraut and caraway seeds (if using) to the skillet with the onions. Stir well, and let the mixture cook for 5-7 minutes.
- Add the cooked potatoes, stirring them into the sauerkraut and onions. Season with salt and pepper to taste.
- Add chicken broth:
- Pour in the chicken broth (or water), and bring to a simmer. Let it cook for another 5 minutes, allowing the flavors to meld together. Adjust seasoning if necessary.
- Return the sausages to the pan:
- Slice the sausages into 1-2 inch pieces and add them back to the skillet with the sauerkraut and potatoes. Stir gently, ensuring everything is combined.
- Cover and cook for an additional 5 minutes to heat through.
- Serve:
- Transfer the mixture to a serving dish and garnish with fresh parsley, if desired.
- Serve hot and enjoy!
This dish is perfect as a comforting, one-pan meal, and it’s great for winter meals or gatherings. You can also pair it with a nice cold beer or a glass of white wine!
