Ingredients
For the Olive Salad:
- 1 cup green olives, pitted and chopped
- 1 cup black olives, pitted and chopped

- 1/2 cup carrots, grated
- 2 cloves garlic, minced

For the Sandwich:
- 1 large round loaf of Italian or Sicilian bread (about 10 inches)
- 1/2 pound sliced salami
- 1/2 pound sliced mortadella
- 1/2 pound sliced ham
- 1/2 pound sliced provolone cheese
- 1/4 pound sliced mozzarella cheese
- Extra olive salad for serving
Instructions
- Make the Olive Salad:
- In a medium bowl, combine the green olives, black olives, roasted red peppers, celery, carrots, garlic, oregano, and red pepper flakes (if using).
- Drizzle with olive oil and red wine vinegar. Mix well and season with salt and pepper to taste. Let it sit for at least 30 minutes to allow the flavors to meld.
- Prepare the Bread:
- Slice the loaf of bread in half horizontally. If desired, you can scoop out a little of the interior to create more space for the filling.
- Assemble the Sandwich:
- On the bottom half of the bread, layer the salami, mortadella, ham, provolone, and mozzarella.
- Spoon a generous amount of the olive salad over the top of the cheeses, spreading it evenly.
- Top and Press:
- Place the top half of the bread over the filling. Press down firmly to compact the sandwich.
- Wrap the sandwich tightly in plastic wrap and place a heavy skillet or pan on top to help press it down. Let it sit for at least 1 hour (or up to overnight in the refrigerator) for the flavors to meld.
- Serve:
