Here’s a delicious recipe for Pumpkin Sourdough Bread, perfect for fall!
Pumpkin Sourdough Bread Recipe
Ingredients:
- For the Dough:
- 1 cup (240g) active sourdough starter
- 1 cup (240ml) warm water
- 1 cup (240g) canned pumpkin puree
- 3 ½ cups (420g) all-purpose flour (or a mix of bread flour)
- 1 teaspoon salt
- 2 tablespoons honey or maple syrup (optional)
- 1 teaspoon cinnamon (optional)
- 1/2 teaspoon nutmeg (optional)
Instructions:
- Mix the Dough:
- In a large bowl, combine the active sourdough starter, warm water, pumpkin puree, and honey/maple syrup. Mix until well combined.
- Gradually add the flour, salt, cinnamon, and nutmeg (if using). Stir until a shaggy dough forms.
- Knead the Dough:
- Transfer the dough to a lightly floured surface and knead for about 5-10 minutes until smooth and elastic. You can also use the stretch and fold method in the bowl if you prefer.
- First Rise:
- Place the dough in a lightly greased bowl, cover it with a damp cloth or plastic wrap, and let it rise at room temperature for about 4-6 hours or until doubled in size.
- Shape the Dough:
- After the first rise, gently deflate the dough and shape it into a round or oval loaf. Place it in a well-floured proofing basket or on a parchment-lined baking sheet.
- Second Rise:
- Cover the shaped loaf with a cloth and let it rise for another 1-2 hours, or until puffy.
- Preheat the Oven:
- About 30 minutes before baking, preheat your oven to 450°F (230°C). If using a Dutch oven, place it inside to preheat as well.
- Score and Bake:
- Carefully transfer the dough to the preheated Dutch oven or onto the baking sheet. Score the top with a sharp knife or razor.
- If using a Dutch oven, cover it and bake for 30 minutes, then uncover and bake for an additional 15-20 minutes until golden brown. If baking on a sheet, bake for 35-40 minutes.
- Cool:
- Once baked, transfer the bread to a wire rack and let it cool completely before slicing.
Enjoy!
This Pumpkin Sourdough Bread is flavorful and perfect for toasting or enjoying with butter. It’s a great addition to your fall baking!
